S'mores at Home!

S'mores from the oven!

My husband was coming home from a long business trip on Friday, so I thought I'd whip up something quick and tasty we could enjoy, both as desserts and snacks! We both love s'mores, but we don't camp very often anymore, so I thought I'd try these at home, and see how they came out.

First, line a sheet pan with aluminum foil, and layer the bottom with graham crackers (approximately 18,) just like my sister's Peanut Butter Chocolate Bark. Then, melt 8oz of milk chocolate and spread over the graham crackers, taking care to cover them as evenly as possible.

Next, cut a whole bag's worth of marshmallows in half, either length or width-wise. (This is just so there's not super too much marshmallow in each bite, your tastes may vary!) Place the marshmallows evenly across the top of the chocolate, covering the whole surface. (You may need an extra bag, just sayin'!)

Broil the whole pan in the oven, on high for about 3 minutes. Alternatively, you could use a butane torch to toast the 'mallows. Place top halves of graham crackers on top, and break the bottoms as evenly as possible. Go ahead and try and stop yourself from eating one during the process. I dare you. Grin.

That's it! I didn't even think I needed pics to show the whole process, but if you'd like - I can go back and make another batch to add them! :)

Recipe - Chocolate Peanut Butter Bark

My sister was recently kind enough to bring over a bit of her (now famous!) chocolate peanut butter bark. Let me tell you folks, this snack might be the best sweet treat ever - but I'll let you try it out, and then tell me I'm right! LOL Anyhow, it may be one of the easiest food crafts I've ever tried, plus it has the added benefit of being both beautiful and super tasty! It's almost too pretty to eat. Almost...

Choco-Peanut Butter Bark - IngredientsIngredients -
  • Graham crackers (appx. 14, depending on baking sheet size)
  • 6 oz semi-sweet chocolate chips
  • 1/2 cup peanut butter (I like chips, as they're easier to measure and melt)
  • 3 oz white chocolate
  • 1/2 tsp real vanilla extract* (I added this myself, as I add vanilla to all desserts!)

Tools - 9x13 baking sheet, foil, microwaveable bowl, offset spatula, mini squeeze bottle

(Prepare tools & ingredients before assembling! As it finishes faster than a freight train, and you'll want everything right at hand.)

Line a  9x13 baking sheet with foil, making sure to cover handles. Layer grahams onto sheet, covering as much space as possible. I found that they fit really well this way, but your container may be a different size. (Yes, I cheesed and was one graham cracker short for my photos, please don't hold it against me!!! They taste just as good, I promise!)

Melt semi-sweet chocolate and peanut butter, and stir til smooth (and spreadable.) Add vanilla, stir in and spread over grahams with an offset spatula, making sure to cover as evenly as possible.

Meanwhile, melt white chocolate into a small squeeze bottle (usually in the candy melt section of the craft stores,) but be sure to keep it quite warm! Chocolate can "set" in these bottles, making it impossible to squeeze; melt with the lid off, and take care to keep the spout open (I like a toothpick for this task!) You can really decorate the tops any way you like, but I prefer toothpick marbling - and here's how I do it.

Bark - In Progress!With the squeeze bottle, make vertical lines on the chocolate bark. They don't have to be perfect, but I like them better slightly closer together, for the marbling effect.

Squeeze as much out of the bottle as you can, trust me it makes clean up easier! Be careful not to fart too much air out onto the bark though, as it makes terrible little pits in the semi-sweet! LOL

Once you've got the squeeze bottle mostly empty, take a toothpick, and run it horizontally against the vertical lines; alternating first down, and then up - to create this pretty marbled effect.

It's so easy to do, and yet it looks so complex! Love it!

Chill in the fridge for at least 30 minutes. Cut into pieces either before or after chilling, your preference. My sister likes to keep hers in the fridge, I leave mine out on the counter. It only lasts a few days, but with chocolate and peanut butter, I dare my husband (or anyone else's, for that matter!!!) to resist... Muahahaha!

Alternatively, you could use the squeeze bottle to decorate your bark any way you like! Write your family's names onto it, draw flowers, a checkerboard - or anything you can come up with! Crafts like these really lend themselves to people's unique creativity, I think; and I hope you'd agree!

Cupcake Pops to match...

Tiffany Mixer - Baloon WhiskMy mom was kind enough to send this to my husband and me, for our 4th wedding anniversary. Well... sort of. Hehe. Okay, so the story goes she sent the boysenberry color, and I had DH lug the huge heavy thing back to our local JC Penney; then we ordered the right color off the internet, (and hoped it'd end up the right color, not a single store in my area carries these colors in stock, so I could see it first! How lame!)

Anyhoo, I've wanted one for years, just hadn't decided if I wanted the Cuisinart version (it has a timed shut off, the KA doesn't.) Apparently the balloon whisk is awesome, but because of a surprise trip to Las Vegas, I haven't gotten the chance to use it yet.

I did get a chance to dip some cupcake pops to match my new mixer, though - how cute?!?!?!

Did I mention I'm headed to Las Vegas this week?!?! Any crafty tips? I'll have a little bit of crafty time, but I'm planning on staying on/near the strip. Any advice would be greatly appreciated!!!

Cupcake Pops!

Oh my word, Bakerella has done it again! As if her totally delicious cake pops weren't cute enough, she's reinvented them in the form of mini-cupcakes! Of course I had to try and make my own, and I think they're actually a bit easier than traditional cake pops. Definitely cuter!

I ended up ordering a few molds on Amazon, normally I like to buy locally; but for whatever reason, I could only find very small cup molds. Bakeralla's link works great, the cups are big enough for my regular sized cake pop balls (approx. 1 rounded teaspoon.) Hehe, balls. Deciding how much candy melt I needed around the bottom & sides was a bit tricky.The fun part was topping them off! I even added some sprinkles! Don't they look delicious?!?!?!!!

More Cake Pops!

Tiffany Blue Cake Pops

After weeks of worth, I must say I'm glad to have my sister's shower over with. I enjoyed working on it, but to be completely truthful, I should've given myself 3 days to prep and I only planned for 2. Two batches of chex mix, 2 1/2 dozen cake pops rolled, lollipopped, dipped, decorated and packaged, a store bought sheet cake (thank god!) and 2 dozen peach roses - it's all over. I even managed to not take pictures of my sister's present - a pair of pachyderms that also happened to be my first DPN project. Hopefully I'll be able to snap some pictures at her house of them!

Anyhoo, after it was all over, I had another 3 dozen cake pops to decorate for myself (as a bit of a reward.) Of course, I had to use my favorite combo of Tiffany blue and white for a few of them. I tried to do bows, but my candy melt was a bit too hot, and poured too messy to distinguish a nice bow from, oh well. I did also manage to decorate a few to match the ones I made for the shower* (although I'll admit I got lazy at 12:30AM the morning of the shower, and used only blue to decorate all of the 4 colors... instead of the awesome-color-coordination going on here.) You know, it's the blog world - of course I'm going to try and make it nicer. Don't we all? Now I'm paranoid it's just me!

*I used candy melts to match the colors in these Martha Stewart bags we used for the favors. Call it the perfectionist in me! Hehehehe.

Orchid & Plumeria Candy Flower Cupcakes

Lately, I've bee
n totally obsessed with desserts… although I'm mostly Norwegian, and my Mom always told me my sweet tooth came from "that side" of my family. (Hehehe, you must also understand that I'm a pretty picky eater, and have always preferred sweets over savory dishes.) Anyhoo, I know I was just bitching about how hard those cake pops were to make, but I let my husband have the last one, and then snap! I made another batch - just like that! Actually, the second batch was much easier, I knew what not to do this time around.

More Cake Pops!I've only made these cake pops in half batches (that is, I bake the cake and split it in two, and only use half the frosting to make a more manageable batch size for me.) Part of the reason for that is I really like the springy cake texture, and you sort of lose that in the pops. No biggie - I just make both! LOL So, this time I made cupcakes and frosted them with the leftover cream cheese frosting. Thinking them a smidge on the plain side, I decided to make some candy melt flowers to top them; and boy did they turn out nice! (Alice or Grace,) they're actually not chocolate but this fabulous sugar based candy coating that molds like a dream.

I used candy molds in the shapes of orchids and plumeria and purple candy melts to make these, and my new favorite tool - the candy melt squeeze bottle. You can melt chocolate or candy melts right inside it, either in the microwave - or a hot bowl of water*! (Heather Bailey's dubbed this the March of Tools and I couldn't help but share my newest find!) I tried to make the centers darker purple, and the outer petals lighter; but the effect turned out much more subtle than I'd hoped. It's okay, I think they're just lovely anyway! I was so happy to find the perfect color yarn leftover in my stash to tie these up. So pretty.

It's been hard not to get too distracted making sweet treats, I'm in the middle of moving my craft room from an upper bedroom to my dining room; and it's hard and not always as creatively satisfying as trying my hand at a new craft. Just keep painting, just keep painting... Grin.

I can has cake pops!

I tried Bakerella's cake pop recipe this week, as a test for my sister's upcoming baby shower. They turned out quite lovely, although were much more labor & time intensive than I'd originally thought. Not that they are that hard, but doing anything 50+ times is bound to be frustrating, if it's your first time! So, I decided they weren't right for the shower, but I had to post about them anyway!

If you want to try these for yourself, I have a few tips. The candy melts need a few minutes to set up, so after you've melted them - don't start dipping right away. Also, you'll need to keep these in the fridge or freezer, and only take out a few at a time to dip & dry. Once they warm up, they'll fall right through the lollipop sticks! Use a piece of styrofoam to stick the pops in to let them dry, although you'll need to keep them turning for a minute or so; otherwise you could end up with candy melting down your sticks! Any other questions? I'd be happy to answer them, this was a fun test!
